Abstract

Mango processing residues (peels, kernel and seed) have little application because they are discarded or used as food feed. However, they have been reported to be potential sources of bioactive compounds. The peel has been the most studied, however, for the Ataulfo variety, the kernel and the seed have been little used, which is why it represents a viable alternative for its revaluation. Pectin recovery conditions were using a 1:40 weight/volume ratio and polyphenols using a 0.20 g/mL ratio. Proximal characterization was performed according to AOAC, antioxidant capacity, and FT-IR ATR in accordance with previous reports. The mango peel is the best source of polyphenols (58 mg/DM), being the polyphenols of the seed the ones with the highest antioxidant capacity (IC50 98.18 ppm) and with the FT-IR ATR a reduction in the intensity of the absorbances (region 1610-1575, 1400-1300 and 1070-1020 cm-1), this is attributed to the recovery of phenolic compounds and pectin from the residues. Therefore, the seed, the stone and the shells are a potential source of bioactive compounds that can have multiple applications.
