Abstract

Mango (Mangifera indica L.) is an agro-industrial fruit that generates up to 60% of by-products, which when discarded decompose and produce gases and microbial proliferation. However, some authors have reported high levels of bioactive compounds and antioxidant activity in these by-products. This study focused on analysing the bioactive compounds and antioxidant potential present in fresh and dehydrated mango, and their by-products (peel and seed). The fruit was obtained from the local market in Chihuahua, Mexico. The parameters of weight, color, soluble solids, titratable acidity, phenolic content, flavonoids, antioxidant capacity, and mineral elements were determined in fresh mango, dehydrated pulp, and by-products. The results showed that the pulp accounted for 54.97% of the total yield, while the peel and seed represented 31.56% and 13.47%, respectively. Fresh fruit and dehydrated pulp exhibited the highest values of soluble solids and SS/TA ratio, while fresh pulp showed the highest Fe and Cu content. The seed presented the highest levels of phenolics, flavonoids, antioxidant activity, and minerals such as K, Ca, Mg, and P, followed by the peel. Therefore, mango peel and seed could be considered as alternative sources for the extraction of natural bioactive molecules, with potential applications in industrial and agricultural processes, or in the development of new products.
