Evaluación de la extracción de compuestos bioactivos (polifenoles y flavonoides) a partir del orujo de uva (Vitis vinifera 'Cabernet Franc')

En este estudio se evaluó la eficiencia de extracción de compuestos bioactivos de polifenoles y flavonoides a partir del orujo de uva (Vitis vinifera 'Cabernet Franc') mediante el uso de diferentes concentraciones de solventes y variaciones de pH. Los extractos se obtuvieron mediante ultrasonido, manteniendo condiciones controladas de temperatura y tiempo para evitar la degradación de los compuestos bioactivos. Los resultados muestran que el tratamiento con etanol al 50 % y pH 3 presentó el mayor rendimiento tanto en flavonoides (219,78 mg EQ/g PS) como en polifenoles (45,61 mg EAG/g PS), seguido por el etanol al 70 % y pH 3 en ambos casos. En contraste, los solventes acuosos mostraron baja eficiencia en la extracción de estos compuestos, confirmando la importancia de los solventes orgánicos para optimizar la recuperación de compuestos bioactivos. Estos resultados indican que la concentración del solvente y el pH son factores importantes para maximizar la extracción de polifenoles y flavonoides del orujo de uva. La optimización de estos parámetros podría mejorar el aprovechamiento del orujo de uva como fuente de compuestos bioactivos, con aplicaciones en las industrias textil, alimentaria y farmacéutica.
