Efecto del ácido gálico y resveratrol sobre el crecimiento de microorganismos probióticos y bacterias patógenas

El ácido gálico (AG) y resveratrol (RVT) son compuestos polifenólicos ampliamente estudiados debido a su actividad anticancerígena, antimicrobiana, antioxidante y antiviral. En diferentes investigaciones se les ha conferido un potencial para ser empleados como terapias alternativas contra distintas patologías. En el presente estudio, se evaluó el efecto del AG y RVT sobre los microorganismos de la microbiota intestinal (MBI): Lactobacillus brevis, Lactobacillus casei y la mezcla de cepas Lactobacillus delbrueckii/ Streptococcus thermophilus, con el fin de conocer su comportamiento de crecimiento en presencia de los polifenoles antes mencionados, además de evaluar el efecto de estos sobre una cepa enteropatógena de Escherichia coli. Esto debido a que se pretende obtener el conocimiento necesario para evaluar el posible daño que se pudiera generar hacia los probióticos en caso de que en un futuro se emplee al AG o RVT como una terapia alternativa que se administre de forma oral. Además, de conocer si es posible que ambos compuestos sean utilizados para inhibir a bacterias patógenas y que a su vez no afecten a la MBI.
