Optimization in food production through the ISO 9001:2015 system

The food microbusiness sector in the municipality of Fresnillo, Zacatecas, Mexico, presents great challenges among which can be found a low standardization and control of processes which directly affects the competitiveness and results of small businesses engaged in this business. This project seeks to demonstrate the importance of the application of a documentary system for the management, control and production of processes and procedures in the activities carried out within a microenterprise of the food sector in the municipality of Fresnillo, Zacatecas, Mexico; in order to achieve a control of the flows in each phase or station of the organization and establish the implementation of Quality Management under ISO 9001:2015 which helped to achieve higher quality and standardization in products and services within the establishment.
